My Favorite Cookie..def a Sugar Cookie

(post by Marissa) I highly recommend to all of you single people to marry someone who does not like your weakness. My weaknesses are cereal, ice cream, and sugar cookies. Luckily, Steve is not a huge fan of any. I think he is lactose intolerant, which eliminates the first 2 and I don't think most men are huge sugar cookie people. Anyways, my sis-in-law Danielle always has the best treat recipes. She is famous for always having some sort of treat in her purse. The first night we are in Myrtle Beach, she is baking all sorts of goodies, from Caramel Popcorn to Rice Krispy Treats.

One of her great recipes is sugar cookies. I wanted to share the recipe because I have serached out for a good sugar cookie recipe as it's my favorite cookie. These cookies (sugar cookies) need the perfect blend of soft/hard. And I mean perfect or else they are either too mushy or too crispy. So enjoy!

Sugar Cookies:
3/4 cup butter
1 cup sugar
2 eggs
1 tsp vanilla
1/2 tsp almond extract (optional)
1 tsp. salt
1 tsp. baking powder
2 1/2 cups flour

Refrigerate for at least one hour so it will be easier to work with when rolling the dough. Roll out dough and cut into shapes. Bake at 425 for 5-8 minutes. Check them until you know how your oven cooks them.

Glaze Icing
2 cups powdered sugar
2 TBLS water
2 TBLS corn syrup
1/2 tsp. vanilla

Butter Cream Icing
5 cups powdered sugar
1/2 cup butter
1/2 cup heavy cream
1 1/2 tsp. vanilla
Whip until smooth (3-4 min)
