
When I first moved to Provo as a young 18 year old, there was this rage over Cafe Rio. I went and liked it..then all of a sudden I started having cravings. When Steve and I started dating, I said we have to go to Cafe Rio. We went and he said, "it's okay"..then he got addicted (more than me). We went there about once a week. Steve: Pork Burrito, Enchilada Style, All rice no beans. Marissa: Soup! Our orders never changed!
Steve started school about 3 weeks before I started working and he would come home and talk about how everyone missed Cafe Rio. Then he proceeded to tell me that I should open up a Cafe Rio (Costa Vida) here in Lubbock. He looked into in, but you have to have a 1.5 million dollar net worth and at least 300,000 in liquid assets. We counted all of our money and we are short by a few dollars and so we aren't able to open one up. (We are accepting donations for the Cafe Rio Startup Fund. All those in Lubbock will benefit!)
I know everyone here continues to talk about Cafe Rio. My parents recently came in town and said, "I bet you guys have some great Mexican here!" Our reply was, "We miss Cafe Rio." They could not believe we could not find something to trump Cafe Rio in TEXAS! However, we can't and neither can several others. However, there is one in the Dallas area!!! For those living in Lubbock, there is hope! We have one in Dallas!
I have friends working across the country from NYC to LA and if they go back to Provo for whatever reason..they all have the same thing on their agenda: CAFE RIO!
I will be going to Utah for Thanksgiving and I think the only Steve is jealous about is the fact that I will certainly eat Cafe Rio.
Side Note: Cafe Rio and Costa Vida are basically the same thing. They were co-owners..broke off, etc.

So some of you may be reading this saying, wow you guys are nuts, but apparently we are not by the looks of the growth! If you have not tasted it and live near one, TRY IT!
So, again to all of those who have tasted Cafe Rio and now nothing will do..I feel for you and understand your pain! You can leave your comments about your love affair with Cafe Rio here! We won't tell anyone! (I apologize to those who have dreams about Cafe Rio tonight.)

That is so funny you wrote about this cause I was going to post a blog about opening up a Costa Vida in Lubbock! Let's do it! Anyone?
I'd hate to be the one to cause you to be jealous for probably the 1st time in your life, but guess what??? We have 2 Cafe Rios and 1 Costa Vida all exactly 10 from our house:) You can come visit us anytime-we'll be sure to take you to one for dinner!!!:)

I've only beeen to Cafe Rio two or three times, (we didn't have one in Rexburg) but I LOVE their lime ranch. My mouth is actually watering now. :) -chels

Marissa-that pork recipe I gave you is JUST like Costa Vida's pork! You need to try it. As good as Cafe Rio and Costa Vida are, it doesn't compare to the real thing, and we're in Texas, so we can find the real Mexican! We're still in search of some excellent Mexican, but we will find it!
